Moved to the services support forum.
I use this same combination with no problems. Make sure that when you build anope you select the correct Ultimate distribution; there are two; one for 2.8.x and one for 3.x.

When anope was compiled, one of the options that had to be set was the ircd to be compiled for. In 1.7.x, I believe this happens when you run the ./Config script. Anope will have to be recompiled if this was not set properly.

I belive the correct syntax you are looking for is:
/msg hostserv set nick whatever.com
UltimateIRCd 3.0 does not support vidents, ie vanity ident.
